Goat Cheese Cauli-Mac























1 large head of cauliflower (chopped into small chunks

5 slices of bacon - diced

2 cloves minced garlic

2 tbsp butter

1/2 C heavy whipping cream

2 oz herb goat cheese (plain is fine too)

1 C grated cheddar

salt and pepper (to taste)


Preheat oven to 375*

1. Boil or steam cauliflower until tender but not mushy, drain and set aside

2. While cauli cooks, fry bacon until crisp, drain and set aside

3. Heat butter over medium heat, add garlic and cook 2 minutes until JUST starting to brown. Add heavy whipping cream and goat cheese and bring to a simmer

4. Remove from heat, add cheddar (retain a small amount for topping) and stir until well blended. Sauce should be pretty thick as cauli will release moisture while baking

5. Combine sauce and cauli in a large bowl. Add a splash of HWC if too thick to mix.

6. Pour mixture into a shallow baking dish (I use a 9x9), top with remaining cheddar and bake 15-20 minutes or until cheese is bubbly and starting to brown. Remove, top with bacon and serve


* Ideas: add chopped cooked sausage or chicken

for a quick easy dinner
