Pizza Casserole



1 package pepperoni

1 lb shredded mozzarella

1 small onion - chopped

1/2 C chopped mushrooms

2 cloves garlic - minced

1/2 C pizza sauce - no sugar added

1/2 C heavy whipping cream

2 Tbsp balsamic vinegar

1 Tbsp butter

1 tsp garlic powder

1 tsp Italian seasoning

1 head cauliflower - chopped


preheat oven to 375*

1. steam cauliflower for 15 minutes until tender but not too soft, drain and set aside

2. saute onions and mushrooms in butter until tender, add garlic and cook 1 minute. 3. Add balsamic vinegar and cook 2 minutes. Add cream cheese, stirring until combined. Add heavy cream, pizza sauce, spices, and 1 C of mozzarella. Cook over med-low heat until combined. Remove from heat.

3. Layer half of the cauliflower into a greased 9x9 pan. Cover with pepperoni, mozzarella and repeat. Pour sauce evenly over the top and add the last layer of pepperoni and mozzarella.

4. Bake 30 minutes at 375*. Allow to set for 5 minutes before serving
