Creamy Taco Soup

1 lb ground beef

1 small onion chopped

1 Tbsp taco seasoning

1 can rotel

1 8ox package cream cheese

2 cups beef broth


chopped fresh cilantro

sour cream

shredded cheese

1. saute onion in a bit of oil or butter until softened. Add ground beef and cook until no longer pink. Drain grease and return to heat. Add taco seasoning and a 1/2 cup of water and simmer until absorbed.

2. Pour meat mixture into a large pot and add all remaining ingredients. Bring to a light boil, reduce to med-low and cook 1 hour to allow ingredients to blend together and soup to thicken.

3. Top and serve!
