Lasagna Casserole

+++Beef Mixture+++

2 lbs ground beef

1 diced onion

2 cloves minced garlic

20 oz tomato sauce - no salt added

1tsp garlic powder

1tsp onion powder

1tbsp italian seasoning

3 packets stevia

1/2 tsp salt

1/4 tsp pepper

1 tbsp butter

+++Cheese Mixture+++

ricotta cheese - 15oz

1 egg

1 C shredded mozzarella

1/4 tsp pepper

1/4 tsp salt

1/4 tsp garlic powder

1 head cauliflower - chopped

1lb shredded mozzarella (less 1 cup for the cheese mixture)

preheat oven to 375*

1. steam or simmer cauliflower until just tender, drain and set aside

2. saute onions in butter until softened, add garlic and cook 2 minutes. Add ground beef and cook until no longer pink. Drain and add sauce and spices. Allow to simmer for 15 minutes. Add additional spices to preference

3. Combine ricotta, spices, egg, and mozzarella and set aside

4. remove beef mixture from heat and assemble casserole in layers: 1/2 of beef on bottom, all of cauliflower, 1/2 of cheese mixture, sprinkle 1/2 of remaining mozzarella, repeat beef, cheese mixture, and remaining mozzarella

5. Bake 20 minutes or until cheese is lightly browned and bubbly. Allow to cool 5 minutes before serving
